Oatmeal Cranberry White Chocolate Cookies

With only 10 more days til Christmas…I haven’t gotten ’round to posting much for it either. That’s all about to change.

I’ve been slow getting motivated for the holidays. The irony is I’ve been listening to Christmas music since mid-November. :p

Only recently have I gotten my act together. Christmas tree is up (My sweetie and I made it). Christmas movie (the classic “It’s a Wonderful Life”) watched. Saw the beautiful holiday lights along the River Walk in downtown. The only thing left was… baking!

Wanted something red and Christmas-y, and just knew craisins would do the trick. I was finally going to bake a cookie recipe I’d known about for a few months now.  Woohoo!  The two main changes is I substituted Craisins for the raisins, and white chocolate morsels for the walnuts.

What’s uniquely different about these cookies is the addition of buttermilk…
Buttermilk?  I know, I thought the same thing!

..And it makes for some delightful cookies!
The cranberries really stands out in these soft cookies…and absolutely wonderful the next day

Recipe
Oatmeal Cranberry White Chocolate Cookies
INGREDIENTS:

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon – we used 2 1/2 teaspoons
  • 1 cup Crisco
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/3 cup buttermilk or milk – we used buttermilk
  • 1 teaspoon vanilla
  • 2 cups Quaker Old Fashioned Oats
  • 1 1/2 cups raisins – we used Craisins Dried Cranberries instead
  • 3/4 cup walnuts – we used 1 cup white chocolate morsels instead
  • Parchment paper, optional

DIRECTIONS:

  1. Preheat oven to 375° F.
  2. Sift together the flour, baking soda, salt, and ground cinnamon. Set aside.
  3. In a large mixing bowl, cream together the Crisco, sugar, and brown sugar. Add eggs, buttermilk, and vanilla. Gradually beat in flour mixture.
  4. Stir in oats, Craisins, and white chocolate morsels.
  5. Place golf ball-sized dough portions 2-inches apart onto greased cookie sheet or parchment paper. Flatten slightly.
  6. Bake for 12 minutes. Do not overbake.

Makes 28 cookies.

These cookies are perfect for Santa…and also for Valentine’s Day!
