Because I haven’t shared a recipe in far too long (considering this is a food blog), I will be posting two back-to-back cake recipes. This first one is in my Top 5 all-time favorite recipes because it’s perfect for pretty much anytime… a snack, breakfast, after dinner, for picnics, after working out. :p
You may not stop at one slice either ’cause it’s not a *heavy* dessert, by any means.
Cinnamon Coffee Cake

Recipe Cinnamon Coffee Cake
INGREDIENTS:
1/4 cup granulated sugar
2 tsp. ground cinnamon
1/4 cup chopped walnuts, optional – I leave out
2 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 cup (1 stick) Land O’Lakes unsalted butter, softened
2 eggs
1 cup granulated sugar
1 tsp. vanilla extract – I use Nielsen Massey
1 cup (8 oz.) sour cream
2 tbsp. Land O’Lakes unsalted butter, melted
Baking spray with flour
PREPARATION:
Soften butter by letting it stand for 30-45 minutes at room temperature OR cut into chunks and allow to stand for 15 minutes.
DIRECTIONS:
Preheat oven to 350 degrees F.
For the topping: Combine 1/4 cup sugar, cinnamon, and walnuts (optional) in small bowl.
Mix the flour, baking powder, and baking soda together in a large bowl or plate.
Cream together the 1/2 cup butter and eggs. Add the 1 cup sugar and vanilla. Then add the flour mixture and beat until smooth. Finally, gently fold in the sour cream using a spatula–batter will resemble dough.
Spray angel food cake pan with baking spray (or use grease and flour). Melt 2 tablespoons butter in microwave (I use 50% microwave power until it’s 3/4 melted, then stir with a spoon until it’s completely melted).
Spread half the batter into greased pan. Sprinkle half of the topping, then repeat. Drizzle melted butter. Bake 35 to 40 minutes OR until toothpick inserted near the center comes out clean. Allow to cool on wire rack.
Oh my gosh, I just realized I’ve been leaving off “Fahrenheit” on probably all of my recipes here. My boyfriend just let me know that most other countries use Celsius. So to answer your question: The 350 degrees is “Fahrenheit”, which converted to Celsius is 176.667 .

One question: Do you really mean 350 degrees?
