Blueberry Cinnamon Ring

I made this with my sis-in-law last year. It’s Sam the Cooking Guy’s recipe. We had used waaaay too much blueberries (what can i say, one of us is heavy-handed, LOL), so it was sickenly sweet, errrrr, did i just say thaat? i meant it was oozing with syrupy goodness. And of course, we couldn’t help ourselves from sprinkling confectioner’s sugar on it. Chalk it up to being women…it’s all about presentation, y’know?

Recipe
Blueberry Cinnamon Ring
INGREDIENTS:

  • Two 10 ounce cans refrigerator biscuits
  • 2 cups frozen blueberries, small berries if you can find them
  • 1/3 cup lemon juice
  • 1 cup sugar
  • 1 tablespoon cinnamon
  • Butter

DIRECTIONS:

  1. Preheat oven to 375 degrees F
  2. Butter bundt pan really well
  3. Mix cinnamon and sugar together
  4. Place about 3/4 cups frozen berries in bottom of pan
  5. Separate biscuits – dip in lemon juice, then in sugar mixture
  6. Stand on side in pan and finish all biscuits until they stand side by side in bottom of pan
  7. Place remaining berries on top – but push some of them through into and between biscuits
  8. Bake approximately 30 minutes, or until brown and firm-ish to the touch
  9. Loosen edges carefully, and turn upside down and unmold
